How to make Chicken briyani

Chicken Biryani is a flavorful and aromatic rice dish made with marinated chicken, fragrant basmati rice, and a blend of spices. It is a popular dish in South Asian cuisine, especially in India, Pakistan, and Bangladesh.



 
Ingredients

For Marination

500g chicken (bone-in preferred)

½ cup yogurt

1 tbsp ginger-garlic paste

1 tsp red chili powder

½ tsp turmeric powder

1 tsp garam masala

1 tsp coriander powder

1 tsp salt

1 tbsp lemon juice

2 tbsp oil


For Rice


2 cups basmati rice


4 cups water


2 bay leaves


3-4 cloves


2-3 green cardamoms


1 cinnamon stick


1 tsp salt



For Cooking Biryani


2 large onions (thinly sliced)


2 tomatoes (chopped)


1 green chili (slit)


½ cup coriander leaves (chopped)


½ cup mint leaves (chopped)


1 tsp cumin seeds


½ tsp garam masala


¼ cup milk (optional, for richness)


A few saffron strands (soaked in warm milk)


2 tbsp ghee or oil



Instructions


1. Marinate the Chicken


1. Mix all marination ingredients in a bowl.



2. Add chicken, coat well, and let it marinate for at least 1 hour (overnight for best results).


Cook the Chicken


1. Heat 2 tbsp oil or ghee in a large pan. Add cumin seeds.



2. Add sliced onions and sauté until golden brown. Remove half the onions for garnishing.



3. Add tomatoes and green chilies. Cook until tomatoes turn mushy.



4. Add marinated chicken and cook on medium heat until the chicken is tender and oil separates.



5. Add chopped coriander and mint leaves. Stir well.


4. Layer the Biryani


1. In a heavy-bottomed pot, add a layer of cooked chicken.



2. Add a layer of half-cooked rice on top.



3. Sprinkle some fried onions, saffron milk, and garam masala.



4. Repeat with another layer of chicken and rice.



5. Drizzle ghee over the top.




5. Dum Cooking


1. Cover the pot with a tight lid or seal with dough.



2. Cook on low flame for 20-25 minutes.



3. Let it rest for 10 minutes before opening.




6. Serve


Gently fluff the biryani and serve hot with raita or salad. Enjoy your homemade Chicken Biryani!
